Super Rich Cacao Dessert
All you need is (for 6-8 servings):
1/2 glass nuts/seeds of your choice (I used 1/3 hazelnuts and 2/3 sunflower seeds)
1/2 glass deciccated coconut
1/2 glass dates or sultanas
2 tbsp melted coconut oil
Pinch of Himalayan salt
For Chocolate Mouse
2 nicely ripe avocados
6-8 tbsp cacao powder (depending how intense you prefer cacao taste)
2-4 or more tbsp healthy sweetener of your choice (I used coconut sugar, adjust amount by tasting)
4 tbsp melted coconut oil
8 tbsp (120ml) aquafaba (liquid from canned chickpeas, alternatively use any unsweetened plant milk)
4 tbsp Jerusalem artichoke flour (you can use any nut, seed or oat finely ground flour or skip this step, you will have a little looser mouse that's all)
1/2 tsp vanilla extract
Pinch of salt
Cacao nibs (optional, only for decoration)
Here’s what you do:
Soak dates overnight or at least for couple of hours if they are super dry, if they are moist and juicy it's not needed. Warm up coconut oil so it becomes liquidy (to keep it raw use 2 pots to warm it up: one with boiling water and second on the top of it with coconut oil). Combine all base ingredients in a food processor with an S-shaped blade until it's start to stick together and nuts are finely cut in a crumbly texture.
Put around 2-3 tbsp of the paste in each dish (I used up-cycled glass jars from desserts my partner loves to eat). It should do 6-8 small portions (depending on the size of jars you choose). Use a spoon to spread and press the paste evenly on the bottom of each jar. Put it to the freezer whilst preparing chocolate mouse layer.
Chocolate Mouse Layer
Warm up coconut oil so it becomes liquidy, using the same method as for the base. Transfer all ingredient (except of cacao nibs) to high speed blender and blend them together until creamy consistency. Taste and add some more sweetener if desired. Pour the paste on the top of base layer equally to each jar. Put it in the freezer for 40 minutes to an hour or until perfectly chilled. Once it's reached desired temperature, dust it with cacao powder, sprinkle with some cacao nibs and enjoy as many as you like, share it with your loved ones and the rest you can either keep in the fridge if you will eat them the day after or save them for later and keep them frozen.
