
Raw Courgette Spaghetti
All you need is (for 1 portion):
1/2 courgette
4-5 sun dried tomatoes (optional)
Handful of raw almonds
Handful of fresh basil
Handful of fresh nettles (optional)
1 garlic clove
1/2 lemon juice
1 tbsp olive oil
Pinch salt
Crack of fresh black pepper
Here’s what you do:
Cut 1/2 courgette into straws (use mandoline if you have one, for finer and more even cuts). Cut sun dried tomatoes to smaller pieces. Place the to the mixing bowl.
The rest of the ingredients (almonds, basil, nettles, garlic, lemon juice, olive oil, salt, pepper) put to a food processor and mill until smooth paste. If the texture is too thick, add a little bit of water or more olive oil.
Pour pesto over the top of courgettes and mix well. Place it to a nice pasta bowl, top it with some basil leaves and finely cut almond and enjoy for lunch or dinner!
Try not to leave it for later as courgette gets watery if left for too long.
