Coco Bliss Balls

All you need is:

2 1/2 glasses shredded coconut

1 glass of cashews, soaked for at least 2-3 hours

1 glass of dates, pitted and soaked for few hours

4 tbsp melted coconut oil

3/4 glass of melted coconut cream

3-4 tbsp of agave syrup (to taste)

Pinch of salt

Here’s what you do:

A night before, soak your cashews and dates. Or alternatively you can do it few hours before you start.

Put aside 1 1/2 glasses of shredded coconut. Melt your coconut oil and cream; add it to the blender with the rest of ingredients. Blend till smooth. Mix in 1 glass of left aside coconut. Leave it for a bit for coconut to soak. If it’s too soft for making the balls add a bit more of coconut, but do not add too much as they will become too dry. Also in the fridge they will become harder. Shape the balls with your palms and roll them into the remaining 1/2 glass of coconut. Enjoy straight away, refrigerate the leftovers. Keep it in the fridge for not longer than 3-4 days. If you want to last them even longer keep them in the freezer for up to 10 days.


*Little Tip. Never melt your raw coconut oil directly on in the pan, use double pan system. One pan with 1/3 of boiling water, second pan smaller with your coconut oil. Place the smaller pan over lager in order to start melting your oil.
