Hello Ginger! breakfast bars 

All you need is:

1/2 glass finely chopped almonds

1/2 glass finely chopped cashews

1/2 glass pumpkin seeds

1/2 glass sunflower seeds

1/2 quinoa 

Handful of goji berries

1 glass dried crystallized ginger (choose the one with least possible sugar)

1/2 glass dates (soaked in water till soft)

1 tbsp agave syrup (or other favourite natural sweetener)

1 tsp ground turmeric 

1 tbsp melted coconut oil

1 tbsp arrowroot starch

Here’s what you do:

Finely chop almonds and cashews either using food processor or just simple knife. When you are happy with the results add them to the bowl together with sunflower and pumpkin seeds, quinoa, goji berries, turmeric and arrowroot starch, mix all together. 

Finely chop dried ginger (also using food processor or by hand) and add it to the same bowl.

Finally add soaked and drained dates, agave syrup and coconut oil to the food processor and blend until smooth paste. Add it to the bowl with nuts and seeds and mixed until even paste. If needed add some more arrowroot starch to thicken the paste. 

Line any decent size flat tray with baking paper, pour the paste and evenly spread it through out. Smaller the tray you use, thicker the bars you will have. Cover the bars with another sheet of baking paper and leave it in the fridge for a hour or two. If you can’t wait, enjoy it straight away and keep refrigerated after. Don’t forget to cut them to the shapes you like.

I recommend consuming within a week, but I am pretty sure that it can last much longer.


There are super tasty and sweet and tiny bit spicy, but most importantly full of plant goodness!! Enjoy for your breakfast or as a desert.
