Refreshing Mango Lime Sorbet
All you need is:
1 large ripe mango
3-5tbsp coconut sugar
1/2 glass water
The juice and finely grated zest of 1/2 lime
Optional for topping:
1 raw fig
1 passion fruit
1 tsp chia seeds
Here’s what you do:
Put the sugar, water, limejuice and zest in a large pan and place over a medium heat. Cook until all of the sugar has dissolved, then leave to cool. Alternatively to keep it raw, dissolve sugar in warm water and simply add limejuice and zest in to the mix.
While the syrup mix is cooling, peel the mangoes and remove the flesh from the stones. Cut it into chunks. Blend the chunks together with the cooled syrup in a food processor until smooth.
Pour the mixture into a container and freeze for 2-3 hours. Remove from the freezer, stir thoroughly with a fork to break up the ice crystals and then refreeze. Repeat two or three times, until it has the smooth consistency of a sorbet. Alternatively, use an ice-cream machine to churn the sorbet according to the manufacturer’s instructions.
Cover the sorbet and store it in the freezer until you are ready to serve.
It will keep for a couple of months.
