Banana Bread Oat Bars

All you need is:

3 extra ripe bananas

3-5 tbsp date/agave syrup

2 tbsp coconut oil

1 glass of gluten free oats

200-250g package of mixed dried fruits and nuts

Handful of sesame seeds

1 tsp cinnamon

Topping (optional):

2 tbsp raw cacao powder

1 tbsp melted coconut oil

2 tbsp date/agave syrup

Raw cacao nibs to sprinkle

Here’s what you do:

Line preferred medium size dish with baking paper. Set aside. Also preheat the oven to 160 degrees.

Mix oats, dried fruits, nuts seeds and cinnamon to one large bowl, stir well. Melt coconut oil, stir it to the mixture. Squash bananas in a different bowl, add date/agave syrup, stir well. Add it to the main bowl. Stir all well. Pour the mixture to the baking dish, spread it evenly, then gently press it, so there’s no gaps of air. 

Put it to the oven and leave for 20-25 min. When ready top should be golden brown. Let it cool, then cut to preferred size bars.

For Topping. Melt coconut oil, add cacao powder and syrup, stir well. Pour it nicely on the top cut bars till chocolate is still warm, sprinkle with raw cacao nibs. Put it to the freezer for 5-10 min to allow chocolate to harden faster.
