Autumn Spiced Granola
All you need is:
100g quinoa (optional)
300g seeds or nuts (I used sunflower and pumpkin seeds)
300g dried fruits
5 tbsp ground flax/linen seeds
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/4 tsp ground cloves
3 tbsp melted coconut oil (optional)
3-5 tbsp nut butter
5 tbsp or more liquid natural healthy sweetener depending how sweet you desire your granola to be (sweetener choices: coconut nectar, brown rice syrup or honey if not vegan; alternatively you can make your own: blend soaked dates into the paste and use that instead
Here’s what you do:
Preheat oven to 180C.
Mix dry ingredients (oats,quinoa, nuts / seeds, dried fruits, ground flax seeds and spices) together in a large bowl.
In a separate bowl mix together melted coconut oil, nut butter and natural sweetener or date paste. Once combined add them to the bowl with dry ingredients and using your hands to massage it evenly making bigger and smaller clumps of granola.
Spread the mixture evenly onto a large baking dish (or 2, if it does not fit on 1) lined with a baking sheet and bake for 18–20 minutes, stirring it few times to ensure even cooking.
Once the granola is browned, remove from the oven and let cool completely before storing it.
Place your granola in an air-tight container (that will preserve the crispiness) and leave in a cupboard for max 2-3 weeks.
Enjoy with warm almond milk or plant based yogurt.
